200gpurple sprouting(or broccoli/ tenderstem, chopped into inches)
2leeks(washed and sliced)
7eggs
85ggoats cheese(crumbled (or feta))
0.25tsppepper
1large cansweetcorn(drained)
Instructions
Heat the oil in a large non-stick frying pan.
Fry the onion for 5 mins to soften. Remove to a plate.
Cook the potato for 5-6 mins on each side (or until lightly golden and slightly tender). Remove to the onion plate. You may need to do this in two batches. I drop 2 tbsp water in and put the lid on for the first few minutes to help cook them.
Meanwhile, chop the leek and purple sprouting and place in the steamer.
Whisk the eggs and season with pepper.
Once the potatoes are done, pour 1/4 of the egg mix into the frying pan and cook until mostly set.
Arrange half the potato on top, then layer half of the peas and half of the cheese, then the remaining potatoes followed by the remaining peas and cheese.
Pour the remaining egg mix over the top.
Put the grill on to preheat.
Start the steamer.
Cook over a low heat for 10 mins until the egg is almost set.
Put under the grill for 5 mins to set the egg on top.
Cut into wedges or bitesize pieces and serve with the sweetcorn, sprouting and leeks on the side.

Prep Tips:It seems like there's not much egg to cover the potatoes, but you do only need a thin layer of the egg to bind it together.This is great to cook as a healthy snack, as cubes can be munched on the go and put in lunchboxes.Health Tips:Eggs contain loads of nutrients that plants struggle to provide (vitamins D and B12), so they're well worth including in your diet if you're not against consuming animal products. Eco Tips:Try and get your leeks and sprouting out of packaging at a local farmers market or shop (hunt about and ask in local gren forums for ones which don't have an overly inflated price). This will save the bags, which are often unrecyclable plastic from being produced.
