Fry the onion for a few minutes, until softening and clear.
Add the leeks and fry for 5 minutes.
Add the rice to the mix for a minute, stirring, before adding the stock (the bouillon and water mixed).
Cover and cook for 20 minutes, stirring regularly and checking that the water has not boiled away (add more if it becomes dry).
Add the ham and peas when the rice is mostly done and cook for a further 5 minutes.
Serve.

Prep Tips:Brown rice will take longer to cook though. If your family is fussy and not into brown rice yet, you can use arborio/risotto rice, but beware that this takes the GL up to 38! Health Tips:We use the brown basmati rice here as it has such a lower GL! Keep your blood sugar more stable by moving away from processed grains like white rice. Save them for smaller portions and rare treat meals if you love it.Eco Tips:Rice packaging is almost always unrecyclable. You can save this waste by finding your local packaging free store and getting your rice (and other nuts, grains and seeds) in your own containers. You can get these things monthly so it's not too much of an extra time burden, and they don't actually cost more than buying in the supermarkets!
