Ok, so black beans are not what you'd think of in a cookie when you start baking, but these are really good - my husband and kids think they're a rival to normal choc cookies! And they're sooo much healthier!
30gdark chocolate chips(or dark vegan choc chopped up)
Instructions
Preheat the oven to 175C.
Blend the beans, nut butter, milk and oil. Make sure the beans are really well blended if you don't want to notice them in the texture.
Add xylitol, coconut sugar, honey, oats, vanilla, cinnamon, baking powder and cocoa powder and blend again until well mixed.
Add the chocolate chips and mix in with a spoon.
Spread onto a lined baking tray in 10 cookie shapes.
Bake for 20 mins - don't let them burn.
Lift the lining out of the tray and leave to cool.
