Strawberry & Chia Pudding
This is a pudding to enjoy with little guilt as it's packed with vitamins, minerals and healthy fats. Chia seeds swell in water and become a bit like a jelly, so really this is a fancy strawberry jelly with a satisfying crunch!

Ingredients
- 200 g strawberries (can use frozen)
- 200 ml almond milk (or other milk)
- 1 tbsp maple syrup
- 100 g chia seeds
Instructions
- Blitz the strawberries, milk and maple syrup in a blender.
- Add the chia seeds and mix well. Leave to thicken in the fridge for 10 mins, mixing 2-3 times, to ensure it thickens evenly.
- Serve straight away or store in a refrigerator.
- If you're entertaining, save a slice of strawberry for decoration.
Notes
Prep Tips:
if you leave the pudding in the fridge overnight, you might want to add some extra milk to it before serving as it will become more thick as the chia seeds absorb the liquid.
This can be made all year round using frozen strawberries.

Fresh strawberries picked locally or from your Farmers' Market in card punnets is much better (for you and the environment) than the strawberries in punnets with the unrecyclable film top, especially if these are from abroad out of season. You can also look for the frozen strawberries in recyclable plastic bags (try to avoid the non-recyclable ones).
