Super Speedy Ginger Cookies

These are so quick and easy to make, and have a lovely soft texture with an interesting crunch from the chia seeds.

Ingredients
  

  • 100 g wholemeal self raising flour (or buckwheat/brown rice flour)
  • 60 g almonds (whole or ground)
  • 40 g pecans
  • 3 tbsp honey (or maple syrup)
  • 1 tbsp ground ginger
  • 1 tsp rapeseed oil
  • 50 ml water
  • 1 tbsp chia or poppy seeds (optional)

Instructions
 

  • Preheat the oven to 200 (180 fan).
  • Blend almonds and pecans into a flour using a food processor.
  • Add the other ingredients and blend into a sticky dough mix.
  • Spread out onto a baking tray covered in baking parchment.
  • Bake for 15-20 minutes, until golden.
  • Leave to cool before cutting and storing in an airtight container for up to a week.

Notes

Prep tips:
You can roll the mix out and cut shapes if desired, but it may require extra flour as it's very sticky!
Health tips:
The chia seeds are optional, but give a nice little crunch so add them if you can. They're also full of goodness.
Honey and maple syrup are rich in many minerals, and contains vitamins and anti-oxidants, They also cause a slower rise in blood sugars than white sugar or corn syrup. So they are a far superior addition to refined sugars.
Eco tips:
Try to use organic, unrefined rapeseed oil from the UK.  It's available in supermarkets.
When buying nuts, try to buy in bulk to reduce the amount of packaging (or source from packaging free stores).  Unfortunately the packets are not yet recyclable.
