Ingredients
  

  • 250 g peanut butter (100% peanuts)
  • 60 ml maple syrup or runny honey (about 4 tbsp)
  • 75 g oats

Instructions
 

  • Preheat oven to 180C (350F) and line a baking tray sheet with baking paper.
  • Process the oats into a rough flour in a food processor.
  • In a mixing bowl add peanut butter with maple syrup. Combine with a spoon until creamy paste forms.
  • Fold in the flour gradually and stir until a cookie dough forms (add additional flour as needed to reach the right consistency).
  • Divide the cookie dough into 12 pieces. Roll each piece into a ball and place it on a baking tray. Flatten each ball with a fork, forming a cross shape on the top of each cookie.
  • Bake for 12-15 minutes until browned.
  • Remove from the oven and allow to cool for 10 minutes or longer on a baking rack. The longer you allow to cool the crunchier they will get.

Notes

Prep Tips:
The longer you leave these to cool, the crunchier they will get. 
Use peanut butter made just from peanuts, with no added sugars or oils.
Health Tips:
These are high fat because of the nuts, and pack over 150 calories each so just have one.  Combine with a piece of fruit to balance it nicely. 
Eco Tips:
Using peanut butter with no added oils avoids issues with the sustainability of these oils, like palm oil. 
Choose oats that are free from packaging or at least in a cardboard box (like Quaker) to reduce plastic packaging.
