Chocolate Overnight Oats with Strawberries

Chocolate flavoured breakfasts seem so naughty, and chocolate and strawberry together seems extra decadent! But you can eat this guilt free 🙂

Ingredients
  

  • 40 g oats
  • 200 ml soy milk
  • 0.5 tsp vanilla extract
  • 20 g sultanas (chopped)
  • 10 g cocoa powder (1.5 tbsp)
  • 15 g hazelnuts (chopped)
  • 6 medium strawberries (chopped)

Instructions
 

  • Combine oats, milk, vanilla, sultanas and cocoa powder in a bowl or a jar.
  • Leave to sit in the fridge overnight.
  • Add the strawberries and nuts in the morning before you eat.

Notes

Prep Tips:
You can add the strawberries and nuts in the night before if you prefer, or will be very short on time in the morning.  They will just be softer.
If you make this in a transportable container, it really can be just a case of grabbing it from the fridge and packing a spoon on your way out in the morning.
If you find this still needs a little sweetening, you can add a drzzle of honey or maple syrup.
Health Tips:
Although having chocolate for breakfast might seem very naughty, it's the sugar in it that's the problem, cocoa actually has many health benefits!  Especially if you buy a raw form of cocoa that hasn't been alkalised or 'Dutched' as this removes many of the beneficial polyphenols. 
Eco Tips:
Cocoa powder comes from a long distance away, and often from countries which do not have the same standards of trade as we do.  Make sure your cocoa is Fairtrade and/or comes from a company concerned with sustainable growing.  Fairtrade cocoa means that the growers are paid a fair price AND there's a contribution to improving local community facilities.
Also try to get your cocoa powder in recyclable packaging, like card or a cellulose bag.
