Orange and Yoghurt Pancakes with Berries
Up for trying something a bit different? Get a fresh citrus start with a perfectly balanced breakfast 🙂
Ingredients
- 2 eggs
- 160 g natural yogurt
- 1 tsp maple syrup
- 2 tsp vanilla extract
- 2 tsp orange peel (grated)
- 120 g wholegrain flour
- 1 tsp baking powder
- 1 tsp coconut oil (melted)
- 0.5 orange (to serve)
- 80 g berries
- 0.5 tbsp rapeseed oil
Instructions
- Mix the egg, yoghurt, sugar, vanilla and orange peel. Fold in the flour and baking powder and mix well until smooth. Lastly, add in the melted coconut oil and mix again.
- Heat the rapeseed oil and fry the pancakes over low-medium heat until golden brown.
- Serve with slices of orange and fresh berries.
Notes
Prep Tips:
You could substitute the yoghurt for a dairy free version, but you would be a little low in protein then... A soy yoghurt substitute would be best.
Health Tips:
Oranges are usually best eaten with other foods and not just before cleaning your teeth as they create an acidic environment in your mouth which is not great for your teeth...
Eco Tips:
This recipe actually uses some of the orange peel rather than throwing it away which is great. Orange peel isn't the best for composting (if you eat a few of them!), but you can use your peels in other ways, like storing them in water and using that as a scented air spray!
