A great one for autumn and using up apple gluts. I freeze apple sauce in my silicone muffin tray so that I can just defrost one portion when I want this for breakfast. It’s a good one for when you’ve run out of fresh fruit.

The sun-dried tomato packs in the flavour, and the beans add substance and nutrients. A great way to liven up plain vegetable sticks for a snack or lunchbox accompaniment.
A moist, satisfying and nutty cake that’s excellent served warm, and not even that bad for you. It’s the perfect accompanyment to an afternoon cup of tea or to fill that 3pm hole instead of reaching for the chocolate or biscuits. Keep your blood sugar in check!
Unfortunately, even though it’s got fruit and veg in it, it only works out as a about 16g per slice, which is 1/5 of a veg portion only…
Smoothies make a great snack and are a great way to get a lot of fruit into yourself (or your kids), but we do need to be careful as they contain a lot of sugars and with the fibres broken down by the blender, they will be absorbed more quickly. So we’ll slow digestion with the addition of healthy fats and proteins.
I love the thick creamy sauce in this dish and it goes down well with everyone in the family. You can make the sauce in advance, or in bulk and freeze some for an easy day.
A real family classic. I’ve added some grated carrot, courgette and spinach into the sauce to add some extra veg, and swapped beef for the more eco-friendly quorn in this one. Still bound to go down well with the kids, especially if you blend the veg in 🙂
