Carrot and Courgette Cake – Healthy yet tasty baking

Carrot and Courgette Cake – Healthy yet tasty baking

A moist, satisfying and nutty cake that’s excellent served warm, and not even that bad for you. It’s the perfect accompanyment to an afternoon cup of tea or to fill that 3pm hole instead of reaching for the chocolate or biscuits.  Keep your blood sugar in check!
Unfortunately, even though it’s got fruit and veg in it, it only works out as a about 16g per slice, which is 1/5 of a veg portion only…

Strawberry Smoothie

Smoothies make a great snack and are a great way to get a lot of fruit into yourself (or your kids), but we do need to be careful as they contain a lot of sugars and with the fibres broken down by the blender, they will be absorbed more quickly. So we’ll slow digestion with the addition of healthy fats and proteins.

Quorn Spaghetti Bolognase

Quorn Spaghetti Bolognase

A real family classic. I’ve added some grated carrot, courgette and spinach into the sauce to add some extra veg, and swapped beef for the more eco-friendly quorn in this one. Still bound to go down well with the kids, especially if you blend the veg in 🙂

Fruity Caribbean Curry

Fruity Caribbean Curry

This is one of my kids favourites, a sweet curry with super soft and succulent chicken – and we adults love it too! It’s also easy to make as it’s cooked in one pot. It does take a little while, but it needs no attention whilst it’s cooking so you can get on with something else (except the rice).
