Salmon Ratatouille
Omega 3 packed salmon and tons of veg, all coated in a rich tomato sauce. The sweetcorn gives that bit of sweetness that kids (and adults!) love. It’s a good one for getting your fish in, even if you’re not a fan.
Raspberry & Coconut Muesli Bircher
Easily prepped the night before, this can bring some variety into your breakfasts if you’re in a bit of a rut. Packed with healthy fats and with just enough protein, it’ll keep your blood sugars managed for hours and it tastes so delicious you can serve it as dessert too (maybe halve the portions though…)!
Chickpea & Tomato Sandwich
Vegetarian sandwich fillings can be a hard to come by. This one has everything you need, especially with fresh, juicy cherry tomatoes in the summer. It can be a little dry for some tastes though, so if you like a moist filling this isn’t for you.
Tuna Nicoise Salad
Salads can often get negative press, but I love a warm salad, especially one as tasty and filling as this! It’s a little protein heavy as there’s so much protein in the beans and spinach, as well as the wheat, but you can’t have a nicoise without egg and tuna so I’ve just reduced the amounts of these compared to the normal versions…
Speedy Italian Bread Soup
A lovely thick luxury tomato soup which can be knocked up in around 20 minutes, with hidden blended beans to make it much more filling.
Salmon with Spring Onion Mash
Full of healthy fats, with a lemon and parsley sauce to add some flavour to the veg and a zingy spring onion mash.
Black Bean & Tomato Pasta
Tomato and pasta always pair well, and black beans work too! Smoked paprika makes everything taste delicious, and you’re getting a good dose of veg here too.
Carrot & Lentil Soup
With its curry hints and lentils, this is a really filling and warming soup great for windy, wintery days. Perfect with a slab of buttered bread.
