Black bean and choc chip cookies
Ok, so black beans are not what you'd think of in a cookie when you start baking, but these are really good - my husband and kids think they're a rival to normal choc cookies! And they're sooo much healthier!
Equipment
- Baking tray
- Food processor
Ingredients
- 1 can black beans (drained and rinsed)
- 1.5 tbsp almond butter
- 3 tbsp milk (can be dairy free)
- 1.5 tbsp coconut oil (extra virgin (or rapeseed))
- 50 g xylitol
- 20 g coconut sugar
- 30 g honey (can replace with maple syrup)
- 2 tbsp oats
- 0.5 tsp vanilla essence
- 0.5 tsp cinnamon
- 1 tsp baking powder
- 3 tbsp cocoa powder
- 30 g dark chocolate chips (or dark vegan choc chopped up)
Instructions
- Preheat the oven to 175C.
- Blend the beans, nut butter, milk and oil. Make sure the beans are really well blended if you don't want to notice them in the texture.
- Add xylitol, coconut sugar, honey, oats, vanilla, cinnamon, baking powder and cocoa powder and blend again until well mixed.
- Add the chocolate chips and mix in with a spoon.
- Spread onto a lined baking tray in 10 cookie shapes.
- Bake for 20 mins - don't let them burn.
- Lift the lining out of the tray and leave to cool.
Notes
Prep Tips:
You can in theory freeze these for later, but they also keep for a 5 days to a week, so I'd be amazed if you don't get through them all by then!
Health Tips:
It's pretty amazing to eat something that tastes like a chocolate cookie, and then realise that it's actually almost good for you - with some vitamins and minerals and a healthy dose of fibres so you're not going to get a blood sugar spike 🙂
Eco Tips:
Choose an extra virgin oil as it will have had less processing. Also, look into how sustainable the coconut oil company is...
