Baked Apples with Raisins

Ingredients
  

  • 2 apples (cooking or eating)
  • 120 ml water
  • 30 g sultanas
  • 0.25 tsp cinnamon
  • 0.5 tbsp maple syrup / honey ((only if using cooking apples))
  • 6 tbsp full fat yoghurt (150g)
  • 1.5 tbsp hazelnuts (chopped)

Instructions
 

  • Core the apples and prick the skins with a fork.
  • Place in an ovenproof dish and pour the water around. Put the sultanas into the centre of each apple, sprinkle with cinnamon and a drizzle of honey / syrup (if using cooking apples).
  • Bake in a preheated oven at 180C for about 45 mins.
  • Serve half an apple topped with yoghurt and sprinkled with hazelnuts.

Notes

Prep Tips:
The easiest way to do this is to use eating apples, they will be sweet enough to require no additional sugars, especially with the sultanas.
Health Tips:
Using fruit as the source of a pudding's sweetness is a great way to keep your meals healthy whilst still feeling like you're getting a treat.  It also teaches children that 'pudding' doesn't have to mean something super sweet and chocolately, but can instead be fruit and yoghurt. 
We're using full fat yoghurt here for the protein it offers.  Choose a good one like Fage, which is just full fat yoghurt and beneficial bacteria with a high protein content (9g per 100g). 
Eco Tips:
Make sure your yoghurt pot is recyclable.
Buy your apples loose and choose UK varieties like Braeburn (you can usually tell from the label on the fruit or on the racks around the fruit.
